As promised here is the recipe for Buckwheat Porridge – lets call it the Tummy Warming Breakfast.


Serves 1
1 Cup buckwheat (soaked overnight in 1 cup of boiling water)
1 Cup Non Dairy Milk ( I love either coconut or hemp in this)
1/2 banana
1 teaspoon cinnamon
1 teaspoon maple syrup (optional)
Top with
1/2 banana or berries
1 spoon of your favourite nut butter
Soaking the buckwheat overnight softens the grout and allows for faster cooking in the morning. Add the milk, 1/2 banana (mashed), cinnamon and maple syrup to the buckwheat over a low heat, stir continuously. Do not let the mix completely dry out, you can add more water if you’d like it a little creamier. Top with banana or berries and nut butter. Enjoy!
Its a wet Monday morning here in Dublin. This is a lovely comforting, warming breakfast. There is so much fibre in this bowl that energy will be released slowly to you until lunchtime, the cinnamon will also help in stabilizing your blood sugar for the morning so you shouldn’t be craving anything for your 11am break!
